I post Egg Recipe once in a while. Let us see here an IndoChinese preparation with Egg which you can have as a starter or or as a side dish with fried Rice.
Ingredients:
For frying the Eggs
Eggs – 4 (Hard Boiled and quartered)
Corn Starch – 3 tbsp
Maida – 2 tbsp
Red Chilli Powder – ¼ tsp
Soya Sauce – ¼ tsp
Salt to taste
Oil – for deep frying
For Gravy:
Sesame Oil or any other vegetable Oil- 2 tbsp
Finely chopped Ginger – 1 tsp
Finely chopped Garlic – 1 tbsp
Large Onion – 1 (cut into cubes and separated into petals)
Thinly Sliced Carrot – ¼ cup
Medium sized Capsicum – ½ (cut into cubes)
Green Chillies – 5 (sliced and deseeded) – 5
Soya Sauce – 1 ½ tbsp
Chilli Sauce – 1 tsp
Tomato Sauce – 2 tbsp
Red Chilli Powder – ¼ tsp
Vinegar – ¼ tsp
Chopped Spring Onion Greens – 2 tbsp
Chopped Spring Onion – for garnishing
Method:
Take all the ingredients under “For frying the Egg” column (except the Eggs) in a bowl.
Add required water and mix them all and make a semi thick batter.
Dip the quartered Eggs.
Deep fry the Eggs till it becomes golden brown.
Take out the Eggs, drain the Oil from it and keep aside the fried Eggs. Keep aside the left over batter.
Heat 2 tbsp of Oil in a pan. Stir fry Ginger, Garlic, Onion, Capsicum and Carrot in it with a pinch of Salt for a minute.
Add the Red Chilli Powder, Soya Sauce, Chilli Sauce and Tomato Sauce.
Add ½ cup of water to the batter which we have kept aside, mix well and add to the above. Stir them continuously.
When it comes to a boil, simmer for 2 minutes in low to medium flame.
Add the fried Eggs and the chopped Spring Onion Greens.
Add Vinegar. Toss well so that all the Eggs are coated evenly with the gravy.
Serve hot.
