Dry Potato is a recipe which is very easy to make and is a tasty recipe which would be liked by all – children as well as adults. I have used crushed Pea Nuts which gives a nutty flavor to this recipe.
Ingredients
Parboiled Potato (peeled and cut into small cubes) – 3
Mustard (Rai) – ½ tsp
Cumin (Jeera) Seed – 1 tsp
Oil – 2 tbsp
Ginger (cut into stripes) – 1 tbsp
Crushed Garlic – 1 tbsp
Green Chilli – 3 to 4 (finely chopped)
Sesame Seed (Til / Ellu) – 2 tsp
Roasted Jeera Powder (Cumin Powder) – ½ tsp
Chilli Powder – ½ tsp
Amchur Powder (Dry Mango Powder) – ¼ tsp
Salt to taste
Turmeric (Haldi) Powder – 1 pinch
Cilantro (Dhania Leaves) – 2 tbsp (finely chopped)
Mint (Pudhina) – 1 tsp (finely chopped)
Crushed Peanut Powder – 2 tsp
Method
Heat the Oil in a pan. Add Mustard. When it crackles, add Cumin Seed and sauté for 30 seconds. Add Ginger, Garlic and Green Chilli. Stir fry for a minute.
Add Dhania Powder, Jeera Powder, Chilli Powder, Salt, Haldi Powder and Amchur Powder. Mix well and cook for a couple of minutes till the masala coats all the Potato Pieces evenly.
Add Cilantro and Pudhina Leaves. Stir for another minute.
Add the Peanut Powder and mix well for another 30 seconds.
Done!
Goes great with rice, roti etc.
