Ingredients:
Egg: 3
Tomato: 2
Chili powder: 2 tsp
Cumin powder: 1½ tsp
Garam masala: ¼ tsp
Cilantro: 1 tbsp
Green chillies: 2 slit
Oil: 2 tbsp
Fennel seeds: ½ tsp
Salt to taste
Method:
Hard boil the eggs and peel them.
Grind the tomatoes to a fine paste.
Heat very little oil and fry the whole boiled egg with salt, little chili powder and turmeric powder for 2-3 minutes on medium heat.
In the same pan, heat oil. Add fennel seeds and once they crackle, add slit green cillies.
Then add chili powder, coriander powder, cumin powder, turmeric powder and salt. Sauté for a minute on slow flame.
Add the tomato puree and cook until oil separates. Add a cup of water and cover and cook for 5 minutes on medium flame.
Now add eggs, garam masala and cilantro. Mix and cook for couple of minutes.
Done!
Goes great with naan or chapatti.
