Bottle Gourd is a vegetable with lot of water content and is a seasonal vegetable during monsoon. Gravy prepared with Bottle Gourd is a tasty recipe which goes well with rice, roti etc.
Ingredients
Bottle Gourd – 250 Gms
Potato – 1
Oil – 2 tsp
Cumin (Jeera) Seed – 1 tsp
Curry Leaves – 1 strand
Red Chilli – 2
Ginger Paste – ½ tsp
Onion – 1 (finely chopped)
Tomato – 1 (finely chopped)
Chilli Powder – 1 tsp
Dhania Powder – 1 tsp
Gram Flour (Besan) – 2 tsp
Haldi Powder – ¼ tsp
Yogurt (Dahi) – 2 tbsp
Saunf (Aniseed) Powder – 1/2tsp
Garam Masala – ¼ tsp
Dhania Leaves (Cilantro) – 1 tsp (finely chopped)
Salt to taste
Method
Peel the skin of Bottle Gourd and discard. Cut the Bottle Gourd into small pieces. Peel the Potatoes and cut them also into small pieces.
Immerse all of them in a bowl of water.
Heat the oil in pan. Add Jeera. When it crackles, add the Curry Leaves and Red Chilly.
In a few seconds, add the Onion, Ginger Paste and salt. Sauté it till the Onion becomes translucent.
Add the Tomatoes and cook till the Tomato becomes soft.
Add Chilli Powder, Haldi Powder, Dhania Powder and Saunf Powder.
Sauté it till the oil separates at the sides of the pan.
Add Bottle Gourd and Potato.
Add 2 cups of water. When it comes to a boil, cover the pan and simmer for 5 to 6 minutes till the vegetables are done.
Mix the Gram Flour and Dahi. Add some water and beat it smooth.
Add this mix to the Bottle Gourd Gravy. Mix well.
Stir cook for a minute to prevent lump formation.
Add Garam Masala. Simmer in medium flame for couple of minutes.
Done!
Note:
Select Tender Bottle Gourd. (If it is pricked with a nail, the nail must pierce it easily.)
While cutting the Bottle Gourd, taste one raw piece. It should not be bitter. Some Bottle Gourd tastes bitter. They are not good ones.
