Date Roll (Dates and Nuts Roll)

We know that Dates are a good source of antioxidants. They help in maintaining blood sugar balance and good for reducing blood pressure.  It is a good brain booster and helps in maintaining bone mass. And we can make many tasty delicious dishes with dates as one of the ingredients. One such a dish is the Date Roll. One can make these date rolls in different ways. And we will see a simple one here. This dish is an apt one for serving as a sweet in festival like Diwali etc.

Ingredients:

Seedless Dates – 2 cups

Chopped Dry Fruits (Almonds, Cashews, Pistachios and Walnuts) – 1/3 Cup

Ghee (Clarified Butter) – 2 tsp

Poppy Seeds (Khas Khas) – 2 tsp

Cardamom Powder- ½ tsp

Nutmeg – 1/8 tsp

Method:

Cut the dates if they are soft. If not soft, crush them coarsely or chop them in a food processor.

Heat a Kadai and dry roast the nuts just for a minute or two in low flame. Keep aside.

Heat 2 tsp of Ghee.  Roast the poppy seeds in it for a minute. Add the chopped dates. Mix well till it becomes a whole mass. It takes around 4 to 5 minutes. Add Cardamom powder and Nutmeg powder. Mix well.

Add the roasted Nuts and mix well till everything combine together evenly. It takes about 2 to 3 minutes for this process. It will become a single non-sticky mass. If you touch with a finger, it should not stick to the finger.

Transfer to a plate and allow to rest for 5 to 6 minutes.

When it is still a little warm to touch, knead it well to make one or two log shaped roll. Roll them in an aluminium foil or a plastic sheet.

Refrigerate them for 15 to 20 minutes. Cut the rolls into rounds using a sharp knife. Allow it to attain room temperature and then serve. It will be little hard and chewy. And it is a very delicious tasty sweet dish to serve in festival times. Enjoy it even at other times.

It stays good for more than 3 to 4 day if stored in air tight container.

Note:

You can coat these rolls with desiccated coconut or roasted poppy seeds or pistachio slivers which will enhance the taste of these rolls.

You can add Melon Seeds or any dry fruit which you have in hand. They will enhance the taste.

Mixing the dates with the nuts and poppy seeds will be little difficult in the beginning. What I did was to use a potato masher – not for mashing, but to mix them.  It will look funny, but it is a very useful method for mixing.
