This Sandwich can be served as a breakfast or packed in the tiffin box of children as well as grownups. This Sandwich is made with Sweet Corn, Cheese and some spices. This Sandwich can be made either by baking or pan frying.
Ingredients:
Sandwich Bread Slices – 6
Butter – 2 tsp
Onion – 1 (finely chopped)
Sweet Corn (Fresh or Frozen) – 1 cup (Boiled)
Capsicum – ½ (finely chopped)
Cajun Spice Powder – 1 tsp
Black Pepper Powder – ¼ tsp
Oregano (crushed with palm) – ½ tsp
Finely Chopped Coriander Leaves – 2 tbsp
Salt – to suit taste
Butter – to toast bread
Grated Processed Cheese – 3 tbsp
Method:
Take three slices of Bread. Cut a round disc from each of them using a cutter or a sharp edged lid or vessel. Keep the outer edges (i.e. the slice with the hole) as well as the round pieces aside.
Heat the Butter in a pan. Sauté Onion. Let the Onion become translucent.
Add Sweet Corn, Capsicum, Salt, Pepper Powder, Cajun Spice Masala, Salt and Coriander Leaves. Sauté them for 2 to 3 minutes in medium flame.
Add the grated Cheese.
Stir well and keep aside.
Spread butter on one full slice of bread. Spread 1/3rd of the above filling on top of it. Cover it with one spread slice with the hole. Fill this with grated processes cheese.
Toast this in an oven till the cheese melts. You can also toast them in a flat pan, but cover with a lid while toasting.
You can also use the round pieces by stuffing them separately and toasting them.
Serve with Ketchup or chutney.
