Roti/Chappati Poha is a dish which I made influenced by the traditional Kanda Poha (Onion Poha). It turned out to be really tasty. The advantage is that you can use left over Rotis for this dish. This Poha can be served for breakfast as well as a snack with tea and coffee.
Ingredients:
Roti or Chapattis – 3
Oil – 1 tbsp + 1 tbsp
Peanuts – 2 tbsp
Cumin Seeds – 1 tsp
Mustard Seeds – ¾ tsp
Onion (medium Sized) – 1 (finely chopped)
Green Chillies – 2 (finely chopped)
Curry Leaves – from 1 twig
Turmeric Powder – 1/8 tsp
Lemon Juice – 1 tsp
Finely chopped Coriander Leaves – 3 tbsp Salt to taste
Water – 1 to 2 tbsp
Method:
Tear the Rotis into small pieces.
Grind them into flakes and keep aside (pulse grind).
Heat one tbsp of Oil in a pan. Roast the Peanuts till they turn crispy. Transfer it to a plate.
In the same pan, add another tbsp of Oil. When it becomes hot, add Mustard and Cumin Seed and allow them to crackle.
Add the Onions, Green Chillies and Curry Leaves. Sauté for a minute till the Onion turns translucent.
Add the Turmeric Powder and stir well.
Add the roasted Peanuts and cook in low flame.
Add the Roti flakes, add Salt. Mix well. Stir cook for 2 to 3 minutes in low flame. Now, sprinkle 1 to 2 tbsp of water and stir cook for 2 to 3 more minutes.
Add the Coriander Leaves and mix well.
Adjust Salt, if required. Switch off the flame. Add Lemon Juice.
Mix well and serve hot.
Note:
You can also add vegetables like Carrot, Beans and Green peas and make this dish more healthy and tasty.
