Cauliflower Rice

Cauliflower has saturated fat in addition to sodium, magnesium, vitamin B6, Protein, dietary fiber. It is an anti-cancer and anti-inflammatory agent. Many recipes are possible with this vegetable. If grated to very, very fine flakes resembling rice, many varieties of preparations are possible which would taste just like rice preparations…if not better J

Ingredients

Cauliflower – 400 Gms

Butter – 1 tsp

Garlic Crushed – 6 pods

Onion Medium Sized – 1 finely diced

Pepper Powder – 1/8 tsp

Chilli Flakes – ½ pinch

Cilantro – 2 tbsp.

Preparation:

Soak the Cauliflower in salt water for 10 minutes. Remove and separate the cauliflower into florets. Cut off the stem as close as possible and discard.

Add the Cauliflower to a food processor, give a gentle pulse till it resembles rice.

 

Heat Butter in a wide pan. Add crushed Garlic.

After few seconds, add onions and sauté until it becomes translucent.

Add the Cauliflower and salt. Mix well. Cover it and cook on medium heat till it becomes soft.

Add Cilantro, Pepper Powder and Chilli Flakes. Cook for a couple of minutes.

Stir once a while. Ensure that Cauliflower Rice is soft and tender, not mushy.

Done!

 

Note: If food processor is not available, Cauliflower can be grated in Cheese or Vegetable Grater.
