We like to eat Guava as a fruit. I have tried to make curries and pickles with semi ripe Guava. They have turned out to be very tasty recipes.
One of the recipes is a curry with Guava with Cashew Nuts. It goes very well with Jeera Rice, Pulav, Roti and Nan
Ingredients
To Grind:
Tomato (big) -2 (chopped)
Cashew Nuts – 10 t0 12
Other Ingredients:
Guava – 400 Gms (2 medium sized)
Ghee (Clarified Butter) – 1 tbsp
Cashew Nuts – 8 to 10 (halved)
Raisin – 1 tbsp
Red Chilli Powder – ¾ tsp
Turmeric Powder – 1 pinch
Cumin Seed Powder – ¼ tsp
Coriander Seed Powder – ½ tsp
Salt to taste
All Spice Powder (Garam Masala)- 1 pinch
Sugar – 1 tsp
Kasoori Methi (dried Fenu Greek Leaves) – 1 tsp
Chopped Cilantro (Coriander) Leaves – 2 tbsp
Fresh Cream – 1 tbsp (optional)
Method
Select hard and semi-ripe Guavas to make this dish.
Cut them into slices. Remove the seeds as much as possible. Cut the slices into small pieces.
Grind the Tomatoes with the Cashew Nuts into a smooth paste.
Heat the Ghee in a pan in medium flame. Add the Cashews and fry for a few seconds.
Add Chilli Powder, Cumin Seed Powder, Coriander Seed Powder and Salt. Stir well. Add the Cashew Tomato Paste immediately. Cook in medium flame for 4 to 5 minutes.
Add the Guava Pieces and Raisins, Add ½ cup of water.
Cover the pan and simmer for 8 to 10 minutes till the Guava become soft. Keep stirring in between.
Add Garam Masala, Kasoori Methi, Sugar, Cilantro and Fresh Cream.
Mix well. Adjust Salt.
Simmer for a couple of minutes.
Done!
Transfer to a serving bowl.
