Carrot Pulav is a dish which would be loved even by kids who do not like the taste of Carrots. It is a tasty, healthy and easy to make Pulav.
Ingredients:
Basmati Rice – 1 cup
Grated Carrots – 2 cups
Ghee (Clarified Butter) – 1 tbsp + 1 tbsp
Cashew Nuts – 8 (optional)
Cumin Seeds – 1 tsp
Cinnamon Stick – 1 piece
Bay Leaf – 1
Green Cardoman – 4 (slightly pressed)
Grated Ginger – 2 tsp
Onion – 1 (sliced)
Green Chilli – 2 (finely chopped)
Turmeric Powder – ¼ tsp
Salt to taste
Lemon Juice – 1 tsp
Finely Chopped Coriander Leaves – ¼ cup
Method
Cook the Basmati Rice with 2 cups of water in a pressure cooker (or open pan).
Heat 1 tbsp of Ghee in a pan. Roast the Cashew Nuts in it, remove from the Ghee and keep them aside.
Add the Cumin Seeds, Cinnamon Stick, Bay Leaf, and Green Cardoman to the pan. When the Cumin Seeds start crackling, add the sliced Onion, Grated Ginger and Green Chillies. Stir fry till the Onion become translucent.
Add the Carrots. Stir them for a couple of minutes.
Add Salt and Turmeric Powder.
Mix well, cover the pan and simmer for 2 to 3 minutes in low to medium flame till the Carrots are done.
Add the Boiled Rice to it and mix them gently.
Add the Coriander Leaves and Lemon Juice. Stir for a minute and transfer to a serving bowl.
Serve with Raita and Pickles. I served it with Green Onion Curry, Guava Pickle and Onion Raita.
Note:
Cool the Rice and separate the grain.
You can add more quantity of grated Carrots, if required.
