Instant Rava Idli is a popular South Indian dish which can be served as a breakfast or light dinner. It is a steamed dish and is digested easily. It does not require any grinding and fermenting like the common Idlis. So, it is also called as Instant Idli. It uses broken wheat (Daliya) also called as Wheat Rava which is a healthy ingredient.
Ingredients:
Broken Wheat (Godhumai Rava / Daliya) – 2 cups
Medium sour Yogurt – 1 cup
Rice Flour – 2 tbsp
Water as required
Salt – to suit taste
Finely chopped Coriander Leaves – 3 tbsp
Oil for greasing the Idli molds
Eno Fruit Salt – 1 tsp
For Tempering:
Oil – 1 tsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Asafoetida (Hing) – 1 pinch
Green Chillies- 1 (finely chopped)
Curry Leaves – from 1 twig
Grated Carrot – 3 tbsp
Method:
In low flame, dry roast the broken wheat for 2 minutes.
Transfer it to a mixing bowl. Allow it to cool.
In the meantime, heat the oil in a small pan for tempering. Add Mustard seeds and Urad Dal and allow it to splutter. Add Green Chillies, Hing, Carrot and Curry Leaves.
Sauté them for a minute.
Pour this tempering over the roasted broken wheat in the mixing bowl.
Add the Rice Flour, Salt and chopped Coriander Leaves. Mix well.
Smoothen the Yogurt and pour to this mixture.
Add required water to make an Idli batter and mix well.
Allow to rest for 20 minutes. If the batter becomes too thick, add some more water to get the right Idli Batter consistency.
Add Eno fruit salt and mix well.
Grease the Idli plates with Oil. Pour the Idli Batter to the cavities. Do not overfill it.
Steam the Idlis for 12 minutes. Remove the Idli plates and allow them to cool for a minute. Remove the Idlis gently with a spoon dipped in hot water.
Serve hot with Chutney of your choice.
Note:
Use fine Rava only for this Idli.
If you have thick Rava, dry roast it. After allowing it to cool, grind it a fine powder and use it for the above recipe.
You can also grind the roasted fine Rava lightly. In this case, you need not add Rice Flour.
