Ingredients:
Tortillas or wheat chapatti: 6
Spinach: ¼ kg
Onion: 1
Green chillies: 3-4
Garlic: 7-8 cloves
Cilantro: Small bunch
Black beans or red kidney beans (soaked and boiled): 2 cups
Cheese (goat, mozzarella or feta cheese): ½ cup
Cumin: 1 tsp
Lemon: 2-3 wedges
Salt to taste
Method:
Slice the red onions into thin strips. Finely chop the garlic and green chillies. Finely chop the spinach. Crumble or grate the cheese.
Heat oil in a pan. Over medium heat, cook the onions till they turn soft. Add the garlic and chillies and sauté till the raw smell of garlic goes away.
Stir in the spinach, beans, cumin powder and salt and mix well till the spinach gets wilted.
Warm the tortillas or rotis.
To assemble: Lay the roti or tortilla on the dish. Ladle out the spinach bean mix on top of it. Sprinkle with cheese and cilantro. Add a squeeze of lemon and done!
