To add to the many South Indian Traditional Stir Fry dishes, we will see how to make the Bitter Gourd (Pavakkai) Poriyal. There are many variations of this Poriyal. This dish is very simple and easy to make! As we know, Bitter Gourd has many health benefits and anyone can eat this dish without any hesitation.
Ingredients:
Bitter Gourd – 300 GMs
Oil – 2 tbsp
Salt – to suit taste
Sugar – 1/8 tsp
To grind:
Grated Coconut – ¼ cup
Red Chilli Powder – ½ tsp
Roasted Cumin Seed Powder – ¼ tsp
Turmeric Powder – 1 pinch
Ingredients for stir fry:
Oil – 1 tbsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Asafoetida – small pinch
Whole Dried Chilli – 2
Large Onion – 1 (sliced)
Curry Leaves – from 1 twig
Method:
Wash and chop the Bitter Gourd into strips as shown. (If there are any hard seeds, discard them). Add Salt and mix well. Allow it to rest for 20 to 30 minutes.
Heat a tbsp of Oil in a pan. Rinse the bitter Gourd and strain the water thoroughly. Add them to the Oil in the pan. Add Salt and Sugar. Sauté them for a 6 to 8 minutes in low to medium flame till the Bitter Gourd turns golden. Transfer to a bowl.
In the meanwhile, take the Grated Coconut, Red Chilli Powder, Cumin Seed Powder and Turmeric Powder in a small mixer jar. Crush them for a few seconds to a coarse form and keep aside.
Heat a tbsp of Oil in a pan. Rinse the bitter Gourd and strain the water thoroughly. Add them to the Oil in the pan. Add Salt and Sugar. Sauté them for a 6 to 8 minutes in low to medium flame till the Bitter Gourd turns golden. Transfer to a bowl.
In the same pan, heat 1 tbsp of Oil. Add Mustard and Cumin Seeds. Add the whole dried Chilli. When the Seeds crackle, add sliced Onion and Curry Leaves.
Sauté in low to medium flame till the Onion turns light golden brown. Add the roasted Bitter Gourd and the ground Coconut. Add Salt.
Sauté them well for 3 to 4 minutes.
Transfer to a serving bowl.
