Banana Rava Kesari is a dessert prepared with Banana, Rava and Ghee. It is a simple recipe and is made generally on special days like Ganesh Chaturthi, Navaratri, Birthdays and such similar occasions.
Ingredients
Rava (Semolina / Sooji) – ½ cup
Sugar – 1/3 cup
Banana – 1
Ghee – 4 tbsp
Cardoman Powder – ¼ tsp
Cashews – 12
Raisin – 1 tbsp
Orange Food Color – 1/8 tsp
Method
Dissolve the food color in a tbsp of water and keep aside.
Peel and puree the Banana by mashing it nicely. (I added thinly chopped Banana which takes more time to mix with Rava)
Heat 2 tbsp of Ghee in a pan. Roast Cashews and Raisins in it till the Cashews turn light golden brown. Keep aside.
In the same pan, add the Rava and roast it on low flame till its color changes slightly and a good aroma starts coming from it.
In the meanwhile, boil 1 cup of water. Add this boiling water to the roasted Rava in the pan.
Add the dissolved food color. Mix well. Cover the pan with a lid and simmer for 3 to 4 minutes in low flame till the Rava becomes soft.
Add the Sugar, Cardoman Powder, Mashed Banana and the remaining 2 tbsp of Ghee. Mix all of them nicely. Since Sugar has been added, the mix becomes little diluted. Simmer till the water and the Ghee starts leaving on the sides.
Add the Cashew Nuts and Raisin. Mix well.
The tasty Banana Rava Kesari is ready. Transfer to a serving bowl.
Note:
Instead of yellow food color, you can add few strands of Saffron to give the color to the Kesari.
Adjust Sugar depending on the taste.
