Pav Bhaji is one of the very popular street foods in Mumbai. It looks that this dish evolved in this city and spread to other cities and towns. Once the Sun goes down, you will find these Pav Bhaji stalls cropping up at every street. Some of these stalls have its own fan following. With Potato, Green Peas, Coriander leaves – all mashed together in a broad pan along with scoops of Butter and served with the Pav Bun is a dish which everyone gets tempted to eat. Pav is a bun especially available in Mumbai city. And we will see a variation of this Pav Bhaji by going green – lot many green and other vegetables added with the usual Potatoes. It is also a very tasty dish. Try this.
Ingredients:
Cauliflower Florets – 200 Gms
Fresh Green Peas – ¼ cup (You can use frozen Peas also)
Potatoes – 250 Gms (Peeled and cubed)
Green Tomatoes – 250 Gms
Butter – 1 tbsp
Oil – 1 tbsp
Cumin Seeds – ½ tsp
Asafoetida – 1 pinch
Spring Onions – ½ cup (the white portion only finely chopped)
Finely chopped Capsicum – ¼ cup
Spinach – 1 bunch (Blanched and pureed)
Green Peas- 3 tbsp (cooked)
Pav Bhaji Masala – 3 tsp
Coriander Seed Powder – 1 tsp
Finely chopped Spring Onion Greens – 4 tbsp
Pav Buns – as required
Butter – to roast the Pav

Method:
Cook the Cauliflower Florets, Potatoes, Green Peas and the Green Tomatoes in a pressure cooker with 2 to 3 tbsp of water and Salt in medium flame for 2 to 3 whistles till the vegetables become tender. Allow it to cool. Open the lid and mash them with a potato masher. Keep aside.
Heat the Oil and a tbsp of Butter in a pan. Roast the Cumin Seeds in it. Add Asafoetida. Add the Spring Onion Whites and sauté for minute. Add the Capsicum and cook for a minute. Add Spinach puree, boiled Green Peas, Coriander Seed Powder, Pav Bhaji Masala and Salt. Cook for 2 to 3 minutes.
Add the boiled and mashed vegetables and a cup of water. Mix well. Cover and simmer for 6 to 8 minutes in low medium flame.
Add Spring Onion Greens. Simmer for 2 more minutes. The Green Pav Bhaji is ready. Transfer to a serving bowl and place a blob of Butter on the top.
Heat a pan and toast both sides of the Pav Buns with butter.
Serve the Hariyali Pav Bhaji with the toasted Buns, chopped Onions and lemon rinds. Serve Masala Chas for a perfect combination.
